How to Order: Texas Style

Authentic craft BBQ is a little different than your average restaurant. We don't have heat lamps, and we don't have "re-fires." Everything we serve comes straight from the pit to your tray. Here is how we do things at Arn’s.

1. The Early Bird Gets the Brisket

We start the fire before the sun comes up and cook low-and-slow for 14+ hours. Because we refuse to sacrifice quality for volume, we only cook a set amount each day.

  • The Rule: We serve until we are sold out.

  • The Pro-Tip: Check our Instagram stories for live "Sold Out" updates before you head down.

2. Order by the Pound

Forget "combo meals." We serve our meats "Texas Style"—sliced to order and sold by weight.

  • The Meats: Order your brisket & turkey by the ½ lb or full pound.

  • The Ribs: Sold by pound. Tell us the number of bones you want, and you pay for total weight.

  • The Trays: Everything is served on butcher paper-lined trays, designed for sharing. Whether you want a single slice or a three-pound feast, just tell the cutter what you’re feeling.

3. Choose Your Sides & Sweets

While the meat is the star, the supporting cast is just as important. All of our sides—from the slaw to our Big Sky Honeyberry Cobbler—are scratch-made, 100% gluten-free, and seed-oil free.

4. No Shortcuts, No Seed Oils

When you reach the window, know that your food was prepared with pure beef tallow, avocado oil, and butter, and smoked over 100% Texas Post Oak. We don't use gas, we don't use electric assists, and we don't use cheap fillers. Just honest smoke and family love.

5. Grab a Seat & Enjoy

Once your tray is loaded, find a spot at Thirty Eight Whitefish. BBQ is meant to be eaten fresh, outside, and with your hands.

6. Quick Ordering Guide

Here’s what amounts will normally feed:

½ LB - The standard for 1 person.

1 LB - Two hungry people, or one serious Texan!

The “Family Platter” - Feed 4-6 or a large family group.
